Moroccan Tajine

Delicious Moroccan Tajine

Description

Tajine is a traditional North African stew named after the earthenware pot it's cooked in. Known for its rich flavors and slow-cooked ingredients, tajine brings together tender meat, vegetables, and aromatic spices for a truly unforgettable dish.

This recipe uses chicken, preserved lemons, and olives for a classic Moroccan flavor.

Ingredients

Steps

  1. In a large tajine or pot, heat olive oil over medium heat and sauté onions and garlic.
  2. Add the chicken pieces and spices. Cook for a few minutes to coat the chicken evenly.
  3. Add preserved lemons (quartered), olives, and fresh herbs.
  4. Pour in water, cover, and simmer on low heat for 1.5 to 2 hours.
  5. Once the chicken is tender and the sauce has thickened, serve hot with fresh bread.
