Moroccan Tajine
Description
Tajine is a traditional North African stew named after the earthenware pot it's cooked in. Known for its rich flavors and slow-cooked ingredients, tajine brings together tender meat, vegetables, and aromatic spices for a truly unforgettable dish.
This recipe uses chicken, preserved lemons, and olives for a classic Moroccan flavor.
Ingredients
- 1 whole chicken (cut into pieces)
- 2 preserved lemons
- 1 cup green olives
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp turmeric
- 1 tsp paprika
- Fresh cilantro and parsley (chopped)
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup water
Steps
- In a large tajine or pot, heat olive oil over medium heat and sauté onions and garlic.
- Add the chicken pieces and spices. Cook for a few minutes to coat the chicken evenly.
- Add preserved lemons (quartered), olives, and fresh herbs.
- Pour in water, cover, and simmer on low heat for 1.5 to 2 hours.
- Once the chicken is tender and the sauce has thickened, serve hot with fresh bread.
